During this summer heat, I like to get a little more creative with my salads, sometimes mixing new combinations of ingredients and trying new flavors. They are my go-to for meal prep both because they are easy to whip up and I can get so much nutrients out of one serving!
One of my favorite challenges during summer is also taking a favorite fruit and finding a way to mix it into a classic recipe. That’s when I started created the watermelon Tomato Mozzarella Salad. I know that if you’re a purest when it comes to your salads, this can seem like a wild idea! Watermelon? Tomatoes? However, I promise that this particular blend is the perfect sweet, creamy, crunchy flavor with just the right herbal decadence to satisfy your taste buds and have you making this meal all summer long.
1 cups cubed watermelon
2 cups halved cherry tomatoes
1 cups diced fresh mozzarella
10 mint leaves chopped
10 basil leaves chopped
2 tbsp balsamic vinegar reduction
2 tbsp olive oil
1 tsp salt
1 tsp black pepper
1) Dice tomatoes into bite size pieces
2) Cut off watermelon rind and cube melon into similar size
3) Dice mozzarella
4) Massage mint and basil leaves in order to extract oils. Thinly slice leaves into ribbons with chef’s knife. (need photo for this step)
5) Toss watermelon, tomatoes, mozzarella, herbs, olive oil, salt and pepper into a bowl. Top with the drizzle of balsamic reduction.
