For those that truly love simple, quick, and versatile recipes, this vegetarian Spicy Cauliflower Rice is a for you!
This recipe can be used it as a base for “rice” bowls, becoming a low carb option with more nutritional value than white rice ( which is stripped of most of its nutrients during mass production.)
The cauliflower rice is also great for meal prep, since you can mix it with different proteins and vegetables throughout the week. Once you do this, you have an easy well-balanced meal that is keto and Paleo friendly!
Side note: You might have noticed that this recipe contains parsnips, a root vegetable that is similar to carrots. This vegetable, which is usually new to most of my clients, has a subtle spicy flavor and is great to add to stir fries, stews, and stuffings. Keep it in mind for future recipes and don’t be afraid to try new foods!
1 head of cauliflower
3 large carrots
1 tbsp olive oil
1) Shred all of your veggies by hand or use a food processor.
2) Place into a sauté pan that has been heated to medium heat with olive oil add salt and parsnips, then place your veggie mix into pan.
3) Cook on medium heat for 10-12 minutes until cauliflower is cooked to desired tenderness.
