Quick Spring Salad Mix

Having greens in your diet is essential yet at the same time, fresh salads are the simplest and easiest meal to whip up. I created this recipe so you have something to toss together for a dinner side dish or to take on-the-go to work or a trip.


I recommend trying to get your fresh carrots at a local farmer’s market, as they are usually fresher and sweeter, creating an extra boost in nutrition and flavor for your meal. In fact, it’s a great challenge to eat as many of your vegetables grown locally as possible since it will allow you to eat seasonally, which is better for your digestion, as well you can know more about where your food comes from since you can ask and chat with your local farmer.


Meal Prep: if this is for lunches we suggest NOT adding the dressing until ready to consume so you don't have soggy lettuce.


Ingredients:

4 cups of spring mix

½ c shredded carrots

½ c diced vegetable of choice (cucumber, bell pepper, tomato, broccoli, etc)


Dressing:

¼ c olive oil

¼ c balsamic vinegar

1 tbsp dijon mustard

1 tsp salt

1 tsp pepper

1 tsp granulated garlic

1 tsp dried basil


Directions:

  1. all dressing ingredients in a mason jar. Simply add all and shake, shake, shake!

  2. In a large bowl add all of the salad ingredients, add dressing and mix!
