Protein Pancakes

Oh the weekends, they often start with a large pot of hot coffee and some type of delicious breakfast! After trying every sweet delicious item for breakfast I realized I was hungry an hour later and honestly all the sugar caused me to the protein pancake was my happy medium! Pancakes and no crash...sign me up!


1 banana

2 eggs

2 tablespoons protein powder (whey or egg white)

1/8 tsp baking powder

dash of cinnamon

pinch of salt


  1. Add all ingredients to a blender, batter will be thinner than you anticipate but that is what we want!

  2. Heat your skillet up so it is hot, spay with a nonstick cooking spray.

  3. Pour 3 tablespoons of batter for one pancake, if you want perfectly round pancakes you can use a metal ring to pour batter into. We personally don't care and just take oddly shaped pancakes, they taste the me. 

  4. Cook for 20-30 seconds then flip, we like to see small bubbles on the pancakes form before flipping. If you are prepping these for meal prep allow them to cool then place in a container in the fridge for a few days. 

This recipe is easy to double and make ahead of time for meal prep! #eatfficient
