Power Bowls

Some evenings we just can't figure out what to have, power bowls are always an easy option. They use left over veggies, some protein, and are relatively quick...this time we made them with a purpose...to go big or not even bother! 


12 oz beef sirloin- sliced against the grain

2 tbsp coconut aminos

1 tbsp fish sauce

1 tbsp sesame oil

1 tsp garlic

1 tsp chili paste

2 zucchini- spiralized

1 sweet potato-cubed

2 heads broccoli-sliced

1/4 red onion- thinly sliced

1 parsnip- coined

1/2 head of kale-sliced


  1. Preheat oven to 425* F. 

  2. Then begin by slicing sirloin and prepping the marinade/sauce. Set aside for 20 minutes while you prep the rest of the vegetables. 

  3. Slice all your veggies, place all of the vegetables except for kale onto a foil lined sheet pan with olive oil, salt, & pepper. 

  4. Place into the oven for 25 minutes, stir half way through. 

  5. Tear kale into small bite size chunks, toss with olive oil, salt, and pepper then lay it flat on a baking sheet, bake for 10 minutes. 

  6. Once finished assemble your bowls, you can toss all the ingredients together or delicately place them like we did to create artwork!

We love bowls strictly for their flexibility in ingredients, if you don't have beef you can use chicken, bacon, fish, etc. If you have left over roasted cauliflower from meal prep, use that! Wanting to increase your carbs in this meal, add rice or quinoa!
