PB Banana & Blue Oats

While traveling in British Columbia, we’ve seen a fair amount of rainy days. Whenever I experience this kind of weather, nothing is more comfortable than my cup of coffee paired with a delicious and comforting oatmeal bowl. No matter where I am, this meal reminds me of home.

Though you may have grown up with sugar filled oatmeal package and now feel like plain oatmeal wouldn’t be as satisfying, I want to offer you this delicious Peanut Banana & Blueberry Oatmeal recipe. With the perfectly paired fruits and the salty smooth peanut butter, this may be the most satisfying oatmeal you’ve ever tried!

A note about bananas: Well ripened bananas as perfect to make any recipe sweet without added sugar. Finding a way to add bananas to other meals such as smoothies, baked goods, and deserts will give you a proper dose of potassium with a creamy sweet flavor!

Meal Prep: This can also be made as an overnight oats to be heated up the next morning quickly! Add water, oats, peanut butter, banana, cinnamon and salt to a mason jar. Heat in the microwave for approx. 2 minutes then add blueberries!

Ingredients(2 servings):

1 c oats

2 c water

¼ tsp salt

1 tsp cinnamon

½ banana sliced

1 tbsp peanut butter

½ c blueberries

  1. Cook oatmeal by adding water, oats, and salt to a saucepan. Cook for 8-12 minutes depending on the oats you used. (we typically have rolled oats in the house but also steel cut. Both work for this recipe and offer different textures.)

  2. Once oats are cooked, add cinnamon and mix well.

  3. Separate into two serving bowls.

  4. Top with sliced bananas and peanut butter, mix again to get the peanut butter melted. Then sprinkle blueberries on top.

Tip: Add and combine different fruits to see which is your favorite!
