Pan Roasted Vegetables

One pan, minimal clean up, meal prep and dinner...its healthy, easy, and mindless what else could you want from a recipe?


3 Full Carrots-coined

1 Purple Onion-quartered

1/2 Head Red Cabbage-sliced

1 Sweet Potato-small cubes

2 tbsp Olive Oil

Salt/Pepper/Granulated Garlic


  1. Preheat oven to 400* Fahrenheit.

  2. Cover a sheet pan for easy clean up.

  3. Chop, dice, and slice all the vegetables and place in large bowl.

  4. Add olive oil, salt, pepper, and granulated garlic to the vegetables...toss and place on to sheet pan. 

  5. Place in oven for 40-50 minutes, prep other food while vegetables are baking. 

Use in egg scrambles, side dish for lunches, or a quick snack!
