Paleo Beef Curry

1 lb cubed steak

1 tbsp olive oil

1/4 white onion

2 cloves garlic

1 tsp ground fresh ginger

1/2 inch finely sliced lemongrass

1/2 c cubed carrots

1/2 c broccoli florets

1/2 c chopped mushrooms

1 tbsp turmeric

2 tsp chili powder

2 tsp fresh cracked pepper

1 tsp fish sauce

1 tbsp coconut aminos

1 can diced tomatoes

1 can coconut milk


  1. Heat olive oil and pepper in a dutch oven

  2. Once oil is warm add cubed beef.

  3. Then add onion, garlic, lemon grass, ginger, carrots, broccoli, and mushrooms- sauté for 3-4 minutes with lid on the pan.

  4. Once vegetables and beef has started to sweat, add turmeric powder, chili powders, pepper, fish sauce, and coconut aminos. Stir well.

  5. Then add diced tomatoes and coconut milk. Simmer for 15-30 minutes depending upon your dinner timeline.
