Mongolian BBQ Beef & Broccoli

Lately, we have been experimenting with new recipes, turning our favorite classic takeout that we might have ordered in the past, and making them into rich paleo meals that have just as much delicious flavor as the original!

Meal prep: The key to making this meal is to prepare the meat and vegetables ahead of time, with the marinade and preparation of the beef being an essential part. First, slice the beef and marinade overnight. As well, wash and chopping your vegetables the night before to make your next night of cooking a breeze!


Ingredients:

Protein:

1 lb sliced sirloin


Marinade:

3 inches piece of fresh ginger- sliced

2 cloves garlic- minced

1 tbsp green onions-sliced

2 tbsp coconut aminos

1 tbsp fish sauce

juice of 1 lime


2 cups broccoli florets

salt & pepper


Instructions

  1. . Add all marinade ingredients to a large glass container, mixing well. Then, lay your thinly sliced sirloin into the marinade, fully submerging the meat. Leave in your fridge for 24-48 hours for the best results!

  2. Wash then chop your broccoli into florets.

  3. Begin by sautéing your broccoli in a pan for 6-8 minutes, making sure it is soft. Be sure to add salt & pepper. Once fully cooked, set aside.

  4. Heat up a tsp of olive oil in the same sauté pan. Once the oil is hot, add your marinated beef. You will cook them quickly 1-2 minutes per side, then allow them to rest.

  5. Toss your broccoli into the pan with the beef and mix for a delicious and filling eat-fficient meal.


This meal is awesome paired with our spicy cauliflower rice (which you can find here)! Prepare a double batch for easy lunches that are even more delicious heated up the next day.
