Carnitas Bowl

Leftovers-let's talk about these...most of ya'll can't stand leftovers which to me was a shock! So I've been racking my brain on ideas to help you reuse leftover foods to help you make lunches quickly that aren't the same old same old!


This can easily be substituted for chicken!


Ingredients(1 serving):

5 oz pulled pork(use leftovers from night before

1 tsp fajita seasoning

1/4 c quinoa

3/4 c water/broth

1 c sautéed bell pepper (green, red, yellow)

1 tsp olive oil

1 tsp fajita seasoning


Directions:

  1. In a large sauce pan add quinoa and water/broth, heat to a low simmer. Set a 10 minute timer and check/stir periodically.

  2. Slice bell peppers and place into a sauté pan with olive oil and fajita seasoning.

  3. Cook bell peppers for 5-8 minutes-we eat them slightly crunchy so we leave a little crunch in them because we heat the bowl the next day.

  4. Quinoa should be almost done-pull off stove and allow to cool.

  5. Place bell peppers into a lunch container and use the sauté pan to heat the pulled pork with the carnitas seasoning for 5 minutes.

  6. Once pork is seasoned add to the lunch container.

In your container you should have roughly 1/2 c cooked quinoa, 5 oz seasoned carnitas, and 1 c fajita vegetables.
