Buffalo Chicken Salad

Vegetables, protein, and buffalo sauce...what else could you possibly need in life?


4 chicken breasts

1/2 c buffalo sauce

1 spaghetti squash

1 tsp ground pepper

1/4 c sliced celery

1/4 c shredded carrots

2 tbsp green onion


  1. Bake the spaghetti squash at 375*F for 30-45 minutes. Allow to cool then scrape out the noodles.

  2. You can either bake, boil, or slow cook the chicken breasts. We have done all of them and slow cooking is our favorite. If you are slow cooking the chicken breast place in the crockpot on low for 4 hours.

  3. Shred the chicken with two forks into a large bowl.

  4. Add the buffalo sauce, pepper, celery, and carrots.

  5. Place chicken over the spaghetti squash -sprinkle with green onions.

  6. Enjoy!
